Our Story: The Brickhouse started with two people who both began their careers washing dishes. Lindsay grew up in Wellfleet; Chef Versel worked his way to Executive Chef at the Wayside Inn in Chatham. They married, they opened 908 Bistro, it won Best New Restaurant on Cape Cod. Now they run The Brickhouse in Eastham — Caribbean-inspired seafood, local catches, and a room that treats you like you belong there.
Our Story — The Brickhouse Restaurant, Eastham MA
"Two people who started washing dishes. One restaurant that means something."

Where It Started
Our story isn't just about owning a restaurant; it's about a lifetime spent in them. For Lindsay, who was born in Provincetown and raised in Wellfleet, growing up on Cape Cod meant summer jobs turned into a lifelong passion. She started as a dishwasher at just 14 years old, working her way through various restaurants across the Lower Cape. She learned the industry from the ground up, understanding that true hospitality comes from hard work and a genuine love for the community.
Chef Versel’s journey mirrors that same dedication. He began his career washing dishes at 17, but his talent in the kitchen quickly propelled him forward. Through years of relentless focus and creativity, he climbed the ranks to become the Executive Chef at the prestigious Wayside Inn in Chatham. His culinary vision is built on years of high-standard execution and a deep respect for fresh ingredients.
Two Kitchens, One Table
Our partnership extends beyond the restaurant industry—we are husband and wife, proudly raising four children under 12 here on the Cape. When we combined Lindsay’s deep local roots with Chef Versel’s culinary expertise to open our first restaurant, 908 Bistro, it was an instant hit. The community embraced us, and we were honored to receive multiple awards, including the Cape Cod Community Choice Award for Best New Restaurant, as well as nominations for Best Seafood, Best Clam Chowder, Best Martinis, and Best Early Bird.
Now, as the owners of The Brickhouse, we are bringing that same winning combination to a larger stage. We invite you to join us—not just for a meal, but to experience the result of decades of hard work, local pride, and a true love for what we do.
"Come hungry. The table is set. We'll be here."
— Lindsay & Chef Versel
